El diálogo inicial reúne algunos elementos arquetípicos que podrían considerarse como punto de partida para el planteo y problematización del tema de investigación. Se trata de un relato recuperado por un equipo de docentes de Tilcara en el libro titulado: “Vivir en la Quebrada de Humahuaca”. La “señora”, es nativa de El Durazno, tiene su hacienda en el paraje Casa Colorada (zona ubicada detrás del Cerro Negro de Tilcara, en cercanías del paraje Alfarcito), y con cierta periodicidad atraviesa la cumbre del Cerro Pircao, en dirección a los valles húmedos en donde tiene sus vacas. En ocasiones baja al pueblo4 para visitar a sus hijxs, permanecer unos días en su casa del barrio La Falda, cobrar su jubilación, comprar alimentos, entre otros quehaceres, y retornar al campo para ver su hacienda. Las comunidades originarias han sufrido un proceso de despojo en relación al territorio y organización social, hace más de 500 años, las mismas generaron estrategias de resistencia expuesta en sus prácticas y en su que hacer colectivo. El espacio comensal, socializado y estructurado pone en evidencia dichas prácticas, lo que a su vez son funcionales a estrechar relaciones entre los miembros de la comunidad así como quienes visitan a ella. En las últimas décadas, la globalización tendió a disminuir la producción como practica ancestral, por causa de los multimedios orientados principalmente al consumo, a un mercado capitalista el cual desfavorece de manera directa la producción comunitaria, influyendo a un desarraigo de la producción en las comunidades, siendo esto una manera para que se produzcan readaptaciones y transformaciones en la comunidad. La cocina regional se fue encaminando a lo largo del proceso histórico como la consolidación de un dialogo intercultural donde se integro lo ancestral con la innovación de nuevas técnicas desde la intromisión de otras bases culinarias, puntualmente desde el impacto Español, sin embargo se evidencia algún tipo de soberanía, arraigo, de los hábitos alimentarios ancestrales.
